Brussel Sprouts Spin-Off

Even while typing this it is still hard for me to believe, I have lost 82 pounds since my second cancer diagnosis last June. I joke around saying I’m like Oprah, just without the money.  I have struggled with weight my whole life, but, for the first time in my whole life, the weight has fallen off of me. My doctors at MD Anderson told me I needed to change my lifestyle, otherwise I would not be around to see my children grow up! REALITY check….again, 2 choices, feel sorry for myself, or do something about it??? I chose number 2.

I don’t want you to have to get that speech in order for your reality check, let’s just call this a RAY check. I’m going to share what I have learned and I’m hoping you will share your healthy eating habits too, I’m continuing to learn new things and I would love to share…PLEASE send me some of your favorite treats, meals or ideas and I would love to share them, it’s easier when we can do it together!

A New Spin on Brussel Sprouts:


  • Coconut Oil
  • Brussel Sprouts (whole and fresh)
  • Salt
  • Seasoning (Mexican)


  1. Cut the ends and peel back layers of the brussel sprouts
  2. In a mixing bowl put a light layer of coconut oil at the base and sides
  3. Add the sprouts, salt and seasoning to taste
  4. Mix around and coat the sprouts with your hands and evenly distribute the coconut oil
  5. Heat a pan and flash fry


Regarding the Mexican seasoning, I got this in Mexico, but you can get it here too.  My kids can’t get enough of them!

Some of you may say coconut oil????? I use it for so much now, you will find it in my bathroom and my kitchen. You can use it for many different things, cooking, teeth whitener, face cleaner, etc….just google it and you will be surprised. I’m starting to see it everywhere too, very affordable! You will see coconut oil in a lot of my recipes!

  1. Nina and I have been cooking with coconut oil for a few years now. We use it for everything. Try making fresh popcorn in coconut oil (no butter required) and you will be amazed.

    Brussel sprouts cut thin uncooked,baby kale chopped, arugula or red cabbage shreds, cherry tomato’s, fresh basil chopped, feta cheese low fat squeeze of half lemon or lime a little olive oil or coconut oil grape seed oil whichever is your choice. Toss all ingredients chill and enjoy. You can add shrimp chicken or whatever you have . This is a favorite in my house. They don’t even know there’s Brussels sprouts in it.
